A week ago, I wanted some cookies, but because of the lock down that is currently happening, I don’t have all the ingredients I wanted, or I usually have in my cupboard. I had to play with what I already had.
These cookies aren’t fully vegan, because I’m using one egg, because I don’t have the ingredient to make a vegan-egg preparation (most of the time I made it with chia seeds). But as I told before, I’m not a full vegan either. I’m an ovo-vegan/ovo-vegetarian because I don’t eat any food from animals except some eggs.
Cookie dough on the tray, ready for the oven !
Ingredients :
- 1 egg
- 60g of vegan butter (room temperature)
- 150g of buckwheat flour
- 100g of sugar
- 1 tbsp of baking powder
- 1 tsp of vanilla extract
- 1/4 cup of chocolate chips
Preheat the oven at 180°C.
Mix together the vegan butter, the egg, vanilla extract and sugar until everything is well combined and smooth.
Then, add buckwheat flour, baking powder and chocolate chips and mix (with your hands if it needed) until you have a dough.
On a baking tray, divide the dough by 20/25 small balls.
Finally, put the tray in the oven for around 10 min. When you’ll put the tray out of the oven, the cookies will still be soft, but take them out of the tray to stop the cooking process.
Lets them cook !
Enjoy the gluten free cookies hot or cold !
Now, it’s time to eat, and let’s be honest, is the best part of cooking or baking something !
You can eat these cookies right after they’re out of the oven or keep them for later. They’re good as warm as cold. You can keep them in the fridge up to one week (if you can convince yourself not to eat them before! ).
